Krakus Ham®, Spinach and Artichoke Dip

Ingredients
½-1 lb Krakus® Ham
½ Tbsp. butter or EVOO
8 oz cream cheese – softened & cubed
½ cup Mayo
1 cup grated Parmesan Cheese
1 box frozen spinach (about 10oz) – thawed and squeezed to drain
1 Can Artichoke Hearts (about 14oz) – Drained & coarsely chopped
½ cup Red Bell Pepper – Chopped
½ cup Monterey Jack or Mozzarella cheese (or any shredded cheese)
½ cup Monterey Jack or Mozzarella cheese (or any shredded cheese)
Black or Red Pepper to taste (salt if desired, but parmesan & ham add saltiness)
Warmed or toasted french bread &/or assorted crackers
Preparation
1. Preheat oven to 3500
2. Lightly grease baking dish.
3. Cube Krakus ham into 1cm cubes.
4. Fry with ½ Tbsp. butter or EVOO until browned and set aside.
5. Mix cubed cream cheese, mayo & Parmesan cheese.
6. Combine spinach, artichokes, and red pepper. Mix well.
7. Stir in cubed ham and ½ cup of shredded cheese (reserve remaining ½ cup to sprinkle on top)
8. Season to taste
9. Spoon into baking dish
10. Sprinkle with remaining ½ cup shredded cheese.
11. Cover & bake for about 20 minutes (until cheese is melted)
12. Remove cover & bake an additional 5-10 minutes until golden on top.
13. Serve with french bread and/or crackers
Krakus Ham® Lasagna (a la Olivia)

Ingredients
3 medium sized potatoes
3 cups Water
1 teaspoon of salt
1 10.5 oz. Can cream of mushroom soup
1 4 oz. Can mushrooms
4 slices of Krakus® ham
4 slices of yellow cheese (swiss, muenster, brick etc.)
Salt and pepper to taste
Preparation
1. Wash and peel potatoes, cut into chunks.
2. Boil potatoes in pot with water and a teaspoon of salt. (about 15 minutes).
3. Drain and mash potatoes when fork tender.
4. In a small casserole pan, place a layer of potatoes on bottom.
5. Spread ½ of can of cream of mushroom soup on top of potatoes.
6. Spread ½ of can of drained mushrooms on top of the soup.
7. Take 2 slices of Krakus ham and place on top of mushrooms.
8. Take 2 slices of cheese and place on Krakus ham.
9. Repeat layers until gone.
10. Bake at 350ºF for 15 minutes.
11. Garnish as desired.
