Episode 8

Savory Sausage

Mussels in Beer Butter Broth   Serves 4


         

Ingredients

2 lb. mussels, cleaned

3 oz. Polish sausage, cubed

½ shallot, julienned

2 garlic cloves, minced

½ fennel head

4 Tbsp. butter

2 cups wheat beer

¼ cup fresh flat-leaf parsley, chopped

Salt, pepper to taste


Preparation

Mix all ingredients except beer in a mixing bowl. Heat pan, add oil and sauté all the ingredients until butter melts and garlic softens. Make sure you do not burn the garlic. Quickly pour the beer into the pan, bring to boil and cover immediately. Let boil for about 1 -3 minutes until mussels open, add parsley. Serve with grilled, sliced bread.

Kale, Mushrooms and Buckwheat Salad   Serves 4


         

Ingredients

½ cup roasted buckwheat

1 bunch kale, without steams 

½ cup mushrooms, sliced 

½ shallot, julienned

2 garlic cloves, minced 

Salt, pepper to taste


Preparation

Cook the buckwheat until soft but still a bit crunchy.  Heat pan, add oil, garlic, shallots and mushrooms. Sauté until garlic browns, making sure not to burn the garlic.  Add kale and cook until it softens a little. Add buckwheat, salt and pepper to taste.

Smoked Gouda and Sausage-Stuffed Burgers   Serves 4


         

Ingredients

2 lb. ground beef (80/20)

¼ cup shredded smoked Gouda cheese

3 oz. Polish sausage, cubed

1 shallot, chopped

¼ cup fresh flat-leaf parsley, chopped

1 tsp. cumin

4 hamburger buns

Salt, pepper to taste


Preparation

Mix ground beef, shallots, parsley and cumin in a large bowl. Form 4 balls (about 8 oz. each.) Press Gouda cheese and cubed sausage into the center of each ball and cover with meat. Form patties, about 1/2 inch thick. Season with salt and pepper.  Grill burgers to desired doneness. Top with lettuce, tomatoes and onions. Toast the bun and spread the aioli on both sides. 

Pickle aioli: Mix chopped pickles, mayo and ketchup in the bowl.
